Abstract

Research has been carried out on the study of the people's salt iodization process Oli'o Village, Kupang Regency. This research aims to study and knowing the ideal ratio of concentration and volume of potassium iodate solution (KIO3) in the process of making iodized salt and the effect of long stirring time on the uniform distribution of iodine in the salt. Method used to produce iodized salt is spray mixing method. This research using four types of salt samples, namely white salt (quality K1), saline medium (K2 quality), brown salt (K3 quality) and boiled salt. On technique spray mixing, salt is sprayed with KIO3 solution. This research includes three stages analysis. Stage 1 analysis of the initial raw material salt includes salt compounds (NaCl), water, calcium ions (Ca2+) and magnesium ions (Mg2+). Stage 2 iodization. At this stage only use boiled salt samples by analyzing the water content and iodine. Stage 3 of qualitative analysis, namely the color test of the boiled salt results iodization to determine the presence of iodine in the salt with marked spots black in boiled salt samples. The results showed that the levels of NaCl 84.53% white salt, 82.05% medium salt, 77.19% brown salt and boiled salt 82.79%. The water content of the white salt sample is 18.62%, medium salt is 5.82%, brown salt 3.82%, and boiled salt 4.42%. white salt Ca2+ and Mg2+ ions ie 0.02% and 0.53%, medium salt 0.50% and 0.83%, brown salt 0.85% and 0.10%, boiled salt 0.12% and 0.49%. The ideal ratio of water and salt is 3:2 ml/kg of salt. The more KIO3 used, the higher the level iodine in salt. The faster the stirring time, the uniformity distribution is also getting better. The final water content meets SNI-4435-2017 standardsi.e. <7%. Qualitative analysis of color test for the presence of iodine in salt done by making 13 series of samples and the result is a salt sample number 7 has a fairly homogeneous distribution of iodine levels, marked with distribution of black color evenly throughout the surface of the salt.
