Abstract

Atakore Village, located in Atadei Sub-district, Lembata Regency, has a geothermal potential known as "Nature's Kitchen". The people of Atakore Village and surrounding villages have utilized this potential for a long time to steam foods such as young corn, cassava, and peanuts in limited quantities for their own consumption. Once steamed in large quantities, they are not shelf-stable and become fodder for livestock. Seeing the untapped potential, Atakore village youth were trained to make two models of cassava chips. This is done so that the products produced can be shelf-stable and can be marketed widely. The materials used are raw cassava while the equipment are knives, manual graters, stainless steel plates and plastic sacks. Model A cassava chips are from steamed cassava in a geothermal pit which is then thinly sliced and dried in the sun. The dried chips are fried and flavored. Model B cassava chips are from fresh cassava which is grated then attached to the inside of a stainless steel plate and steamed on the surface of the natural kitchen pit until it becomes ripe, then dried and fried and flavored. The results of the activity were the production of model A and model B chips. The participants of the activity stated that they gained new knowledge about innovation in utilizing Karun's geothermal potential to produce products that can have business value, and not only for their own consumption or as animal food
