Abstract

One kind of plant that is high in anthocyanins is red cabbage (Brassica oleracea L). One kind of flavonoid compound is anthocyanins. Anthocyanins can be employed as indicators because one of its characteristics is their sensitivity to pH shifts. This study set out to ascertain 1) the color characteristics of red cabbage extract (EKM) in a pH 1–14 solution., 2) the phytochemical content of EKM, 3) the effectiveness of using EKM as a titration indicator compared to phenolphthalein for HCl-NaOH, HCl-NH4OH, CH3COOH-NaOH titrations, 4) the precision and 5) the accuracy of using EKM compared to phenolphthalein for HCl-NaOH, HCl-NH4OH, and CH3COOH-NaOH titrations. In this study, EKM was obtained from fresh red cabbage macerated for 24 hours. 1) The color character of EKM in pH 1–14 solution was found to be deep red at pH 1, bright pink at pH 2, pale pink at pH 3–6, pale purple at pH 7, bluish purple at pH 8–9, blue at pH 10–11, greenish blue at pH 12, green at pH 13, and yellow at pH 14. 2) EKM comprises groupings of flavonoid chemicals, alkaloids, tannins, saponins, and triterpenoids, according to the results of phytochemical testing. 3) EKM performs well as an indicator like phenolphthalein for HCl-NaOH, HCl-NH4OH, and CH3COOH-NaOH titrations, according to the efficacy test results. 4) The precision test results demonstrated that EKM has strong precision like phenolphthalein. In the titration of samples without spikes, the CVs obtained were 0%-0.48% for EKM and 0% for phenolphthalein, respectively. In the titration of the spiked sample, EKM also showed good precision such as phenolphthalein with CVs of 0%-0.40% for the EKM indicator and 0% for the phenolphthalein indicator, respectively. 5The accuracy test results demonstrated that EKM had good accuracy, including phenolphthalein for the titration of HCl-NaOH samples and the titration of HCl-NH4OH samples with recoveries of 91.32-91.48 for EKM and 91.32% for phenolphthalein, respectively, but was not accurate for the titration of CH3COOH-NaOH samples with a recovery of 40.40%.
