Abstract

The research results obtained: (1) The combination extract of young coconut water, ginger and lime has physicochemical properties, including solubility in ethanol 70%, acetone, and insoluble in chloroform and diethyl ether, has a density of 0.96 gr, boiling point 85Oc and the color changes from pink to faded pink, and to brown. Changes in taste from sour to bitter, the aroma from the aroma of ginger and lime to a slight ginger aroma and the acidity level from pH 2 to pH 3 and to pH 4. (2) The combination extract of young coconut water, ginger and lime contains a group of compounds secondary metabolites of flavonoids, tannins, saponins and triterpenoids and alkaloids.
