Abstract

Moringa or merunggai (Moringa oleifera) is a type of plant with small, ovalshaped leaves, arranged neatly on a stalk. If Moringa leaves are picked and stored for 1 day to 1 month (30 days), they will experience physical changes in color and texture which can be seen from changes in color and shape of the leaves. This research aims to detect the level of color and texture changes in Moringa leaves. This research used 300 images of Moringa leaves, taking 10 images every day for 30 days (1 month), using the Red, Green, Blue and Gray Level Co-occurrence Matrix method. The calculation results of the average Red, Green, Blue extraction values with the average red intensity value is around 2.7, the average green intensity value is around 2.9, the green value is considered 100%, the average blue intensity value is around 1.2 . with the blue component only contributing about 41.4% of the green intensity while in the Gray Level Cooccurrence Matrix, homogeneity is 98%, energy is about 79%, correlation is about 95%, average contrast value is about 2.8%. The results showed that changes in color and texture of Moringa leaves tended to decrease during the observation period of 30 days. Further analysis suggests that these fluctuations may be caused by external factors such as changes in lighting or environmental conditions.
