Abstract

Purple sweet potato tubers are a source of purple pigment. The main compound content in purple sweet potato tubers is anthocyanins. Anthocyanins are compounds that can give red, purple, blue colors to flowers, leaves, tubers, fruits and vegetables depending on the pH of the environment in which they are located. This study aims to determine 1). effectiveness of purple sweet potato extract to identify acidic and basic properties, 2). The effectiveness of natural indicator paper from purple sweet potato to identify acid and alkaline properties, 3). The color stability and sensitivity of the natural indicator paper produced are based on the length of storage time. This type of research is a laboratory experiment using purple sweet potato samples. There were two variations of the sample treatment, namely the undried purple sweet potato sample (base sample) and the dried purple sweet potato sample (dry sample). The parameters in this study are 1). the effectiveness of purple sweet potato extract was observed by changing the color of the extract in the pH 1-14 test solution and in various acidic and basic sample solutions, 2). the effectiveness of natural indicator paper was observed by changing the color of the indicator paper in pH 1-14 test solutions and in various sample solutions that were both alkaline and acidic, 3). The color stability and sensitivity of the resulting natural indicator paper were observed through the color stability of the stored natural indicator paper based on the length of storage time. Based on the results of the research that has been done, it is found that 1). Purple sweet potato extract from alkaline samples and dry samples was effective for identifying acid-base properties at various pH of the test solution and various acid and alkaline samples, namely at pH 1-3 it was dark red, pH 4-7 was faded red, pH 8- 11 green, pH 12-14 is yellow, 2). indicator paper of alkaline sample extract is more effective in identifying acid-base properties at various pH solutions and various acid and alkaline samples than dry sample extract indicator paper, 3). purple sweet potato natural indicator paper has color stability and sensitivity based on the length of storage time, namely the color stability of the alkaline sample extract indicator paper is 3 days but still provides good sensitivity until the 7th day of storage, the color stability of the dry sample extract indicator paper is 30 days but gave good sensitivity only up to the 3rd day of storage.
