Abstract
Phytochemical screening or also known as phytochemical screening is a preliminary test to determine which secondary metabolite compounds have biological activity from a plant. Turmeric is a tropical plant that is widely found in the Asian continent which is visited as a food coloring and fragrance. Lime is a plant originating from Southeast Asia which has a strong aroma and distinctive taste and has chemical properties such as sugar content, very low pH and very high sour taste. Ginger is a spice plant originating from South Asia, and now has spread throughout the world. The combined extract of turmeric, lime and ginger has not known its physicochemical properties and secondary metabolite content, so this research was conducted to obtain information on physicochemical properties and content of secondary metabolite compounds. The research method was carried out by combining turmeric and ginger which had been mashed with lime juice and hot water and then macerated. The resulting extract was used to test physicochemical properties (solubility, boiling point, organoleptic, acidity, density) and to identify groups of secondary metabolites (flavonoids, tannins, saponins and steroids /triterpenoids and alkaloids). The research results obtained: (1) The combined extract of turmeric, lime and ginger has physicochemical properties, including solubility in 70% ethanol, acetone, and insoluble in chloroform and diethyl ether having a density of 0.63 gr, a boiling point of 75 ° C and a change. The color changes from orange to faded yellow, the taste changes from sour to slightly sour and there is a change in the aroma of ginger and turmeric to be slightly reduced and the acidity level from pH 4 to pH 5 on day 11 to day 14. (2) Extract The combination of lime turmeric and ginger contains a group of secondary metabolite compounds of flavonoids, tannins, saponins and triterpenoids and alkaloids.
