Abstract
Research has been carried out to study secondary metabolites and antioxidant activities in various species in the allium genus. The purpose of this study was to determine the content of secondary metabolites with antioxidant activity. The research method used is literature study. The result showed that secondary metabolites contained in various species of the allium genus have antioxidant activity, namely flavonoids and phenolics. The contect of secondary metabolites that are able to reduce free radicals through hyrolysis of H atoms in the phenol group causes onions to have antioxidant properties.
